Ingredients:
- 8 ounces of whole wheat or gluten-free noodles
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup mixed vegetables (such as bell peppers, carrots, broccoli)
- 1 cup cooked protein (chicken, shrimp, tofu)
- 2 tablespoons low-sodium soy sauce or tamari
- 1 tablespoon honey or maple syrup
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Optional garnishes: chopped green onions, sesame seeds
Instructions:
- Cook the noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat olive oil over medium heat. Add minced garlic and cook for about 1 minute until fragrant.
- Add mixed vegetables and cooked protein to the skillet. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
- In a small bowl, whisk together soy sauce or tamari, honey or maple syrup, rice vinegar, sesame oil, salt, and pepper.
- Pour the sauce mixture over the vegetables and protein in the skillet. Stir to coat everything evenly.
- Add the cooked noodles to the skillet and toss well to combine with the sauce and vegetables. Cook for an additional 2-3 minutes until heated through.
- Taste and adjust seasonings if needed.
- Serve the healthy noodles hot, garnished with chopped green onions and sesame seeds if desired.
