Simple and Healthy Noodles Recipe:



Ingredients:

  • 8 ounces of whole wheat or gluten-free noodles


  • 1 tablespoon olive oil


  • 2 cloves garlic, minced


  • 1 cup mixed vegetables (such as bell peppers, carrots, broccoli)


  • 1 cup cooked protein (chicken, shrimp, tofu)




  • 2 tablespoons low-sodium soy sauce or tamari


  • 1 tablespoon honey or maple syrup


  • 1 tablespoon rice vinegar


  • 1 teaspoon sesame oil


  • Salt and pepper to taste


  • Optional garnishes: chopped green onions, sesame seeds


Instructions:

  1. Cook the noodles according to package instructions. Drain and set aside.

  2. In a large skillet or wok, heat olive oil over medium heat. Add minced garlic and cook for about 1 minute until fragrant.

  3. Add mixed vegetables and cooked protein to the skillet. Stir-fry for 3-4 minutes until the vegetables are slightly tender.

  4. In a small bowl, whisk together soy sauce or tamari, honey or maple syrup, rice vinegar, sesame oil, salt, and pepper.

  5. Pour the sauce mixture over the vegetables and protein in the skillet. Stir to coat everything evenly.

  6. Add the cooked noodles to the skillet and toss well to combine with the sauce and vegetables. Cook for an additional 2-3 minutes until heated through.

  7. Taste and adjust seasonings if needed.
  8. Serve the healthy noodles hot, garnished with chopped green onions and sesame seeds if desired.
