Homemade Pasta



Here's a basic recipe for homemade pasta:

Ingredients:

  • 2 cups all-purpose flour


  • 2 large eggs


  • 1/2 teaspoon salt


  • Water (as needed)


Instructions:

  1. In a large mixing bowl, add the flour and salt. Make a well in the center.


  2. Crack the eggs into the well and lightly beat them with a fork.



  3. Gradually incorporate the flour into the eggs, mixing with a fork or your hands until a dough starts to form.



  4. If the dough feels too dry, add a little water, a tablespoon at a time, until the dough comes together. If it's too sticky, add a sprinkle of flour.

  5. Transfer the dough onto a clean, floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic.

  6. Shape the dough into a ball and wrap it in plastic wrap. Let it rest at room temperature for at least 30 minutes, up to 1 hour. This allows the gluten to relax and makes the dough easier to roll out.


  7. After resting, unwrap the dough and cut it into smaller portions. Work with one portion at a time, keeping the rest covered to prevent drying out.


  8. Roll out the dough using a rolling pin or a pasta machine, starting from the widest setting and gradually decreasing the thickness until you reach the desired thickness. Aim for about 1/16 to 1/8 inch (1.5 to 3 mm) thick.


  9. Once the dough is rolled out, you can shape it into your desired pasta shape. For example, you can cut it into strips for fettuccine or tagliatelle, or shape it into tortellini or ravioli.


  10. As you shape the pasta, dust it with flour to prevent sticking. You can also hang it on a pasta drying rack or lay it flat on a baking sheet dusted with flour until ready to cook.


  11. To cook the pasta, bring a large pot of salted water to a boil. Add the pasta and cook for 2-4 minutes, or until al dente (tender but still firm to the bite).

  12. Drain the pasta and serve it immediately with your favorite sauce, such as marinara, alfredo, or pesto.
