Phirni



Phirni is a popular Indian rice pudding that is typically made with ground rice, milk, sugar, and flavored with cardamom and saffron. It is a rich and creamy dessert that is often served chilled.

Here's a simple recipe for phirni:

Ingredients:

  • 1/4 cup basmati rice


  • 4 cups milk


  • 1/2 cup sugar (adjust according to taste)


  • 1/2 teaspoon cardamom powder


  • A pinch of saffron strands
  • Chopped nuts for garnish (e.g., almonds, pistachios)







Instructions:

  1. Rinse the basmati rice under cold water and then soak it in water for about 30 minutes. After 30 minutes, drain the water and grind the rice into a coarse powder using a blender or food processor.

  2. Heat the milk in a heavy-bottomed saucepan over medium heat. Bring it to a boil and then reduce the heat to low.

  3. Add the ground rice to the milk, stirring continuously to prevent lumps from forming.

  4. Continue cooking the mixture on low heat, stirring frequently to avoid sticking to the bottom of the pan. Cook for about 30-40 minutes or until the rice is completely cooked and the mixture thickens.

  5. Add sugar, cardamom powder, and saffron strands to the pan. Mix well and cook for another 5 minutes.

  6. Remove the pan from heat and let the phirni cool to room temperature.

  7. Once cooled, pour the phirni into serving bowls or glasses and refrigerate for at least 2 hours or until chilled.

  8. Before serving, garnish the phirni with chopped nuts like almonds and pistachios.
