Lemon Garlic Roast Chicken

Preheat the oven to 425°F (220°C).
Rinse the chicken inside and out with cold water and pat it dry with paper towels.
In a small bowl, combine the garlic, lemon zest, olive oil, thyme, salt, and black pepper. Rub this mixture all over the chicken, making sure to get it under the skin as well.
Place the chopped onion in the bottom of a roasting pan and place the chicken on top.
Pour the chicken broth into the bottom of the pan.
Roast the chicken in the preheated oven for about 1 hour and 30 minutes or until the internal temperature reaches 165°F (75°C) when measured with a meat thermometer.
Baste the chicken occasionally with the pan juices.
Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
Serve with the pan juices and a squeeze of fresh lemon juice. Enjoy!
