GOAN DODOL
Goan Dodol is a traditional Goan sweet dish that is popular in the state of Goa, India. It is a delicious and rich dessert made from coconut milk, jaggery (a type of unrefined cane sugar), rice flour, and cashew nuts. Dodol has a fudgy and chewy texture and is usually served in square or rectangular shapes.
Here's a recipe for making Goan Dodol:
Ingredients:
- 2 cups grated coconut
- 1 cup jaggery, grated or chopped
- 1 cup rice flour
- 1 cup coconut milk
- 1 cup water
- 1/2 cup cashew nuts, chopped
- 1/2 teaspoon cardamom powder
- Ghee (clarified butter) for greasing
Instructions:
In a large saucepan, combine the grated coconut, jaggery, and water. Cook over medium heat, stirring continuously until the jaggery melts and the mixture thickens.
In a separate bowl, mix the rice flour with coconut milk to make a smooth batter. Make sure there are no lumps.
Add the rice flour batter to the coconut-jaggery mixture and mix well. Continue cooking over low heat, stirring constantly to avoid any lumps.
Keep cooking the mixture until it thickens and starts to leave the sides of the pan. This process can take around 45 minutes to an hour, so be patient.
Once the mixture thickens, add the chopped cashew nuts and cardamom powder. Stir well to combine all the ingredients.
Grease a square or rectangular dish with ghee. Pour the dodol mixture into the greased dish and spread it evenly.
Allow the dodol to cool completely at room temperature. Once cooled, you can cut it into small squares or rectangles.
Serve the Goan Dodol as a sweet treat or dessert. It can be stored in an airtight container at room temperature for a few days.
